Weekly Menu

Well, it’s the beginning of another week! Last week, our leftovers lasted longer than expected, and we had plans that I forgot to account for, so I carried over several meals from last week to this week’s menu. Here is what we will be eating this week:

Monday
Breakfast: Mixed berry pancakes, strawberries
Lunch: Chicken salad sandwich, chips
Dinner: Roast beef, baked potatoes, carrots, grape salad (this is a really yummy salad…I will post the recipe soon:)

Tuesday
Breakfast: Waffles, strawberries
Lunch: Chicken salad sandwiches, chips, grape salad
Dinner: Three-Cheese Baked Spaghetti, salad, garlic bread

Wednesday
Breakfast: Applesauce muffins, peaches
Lunch: Salad with hard-boiled eggs and bacon, yogurt
Dinner: Chicken and dumplings, green beans

Thursday
Breakfast: Applesauce muffins, bananas
Lunch: PB&J, chips, apple
Dinner: Biscuits, eggs, bacon, hash browns

Friday

Publix Deal – Saved 54%!

The deals at Publix this week are not spectacular; however, there are some noteworthy deals. Also, Publix has 3 “Buy Theirs, Get Ours Free” deals this week.

When you buy Sun-Maid Raisins, McCormick Sloppy Joes seasoning mix, and Tyson Chunk White Chicken, you get the comparable Publix product for free.

You might notice that I spent more than $50 this week (well, not yet, but I will by the end of my “budget week”). This is because we are switching up our envelope system a little bit to combine our weekly budget, our Costco/Surplus budget, and our eating out budget. I will try to post soon on the details of this new system and why we decided to switch.

I am so excited that we are going to be in town for the whole week and that we are getting back into our routine! Between being out of town and being disorganized while we were in town, we have spent way too much money eating out this month. It just goes to show that planning and organizing ahead of time really helps to decrease the amount of money you spend by decreasing your spontaneous spending. So, I am definitely looking forward to being able to follow a menu plan this week! Here is what we are eating this week:

Dinner: Steak fajitas, Spanish rice, salad with Honey-Lime dressing, kiwi

After several weeks of going in and out of town and dealing with worries about my son, it was nice to be able to start settling back into our routine again, including shopping on our regular days and attempting to get my coupons back into order (there is still a lot of work to be done!)! This week there were some pretty good deals at Publix. I think that my favorite deal was really cheap Dial hand soap! I am a hand washing fanatic, and we go through a LOT of hand soap, so I’m always excited to see a good soap deal!

I was really excited to get cucumbers and squash from my grandparents’ garden (I included these in the picture, because they are part of our groceries for the week)! For awhile now I have been considering starting a garden, but I do not know anything about how to get started. So, for now, I will just have to occasionally benefit from my grandparents’ garden! You might have noticed that I have been absent for the past several weeks. Life has been incredibly hectic and stressful for us for the last several weeks! We have gone out of town 3 times in the last 2 weeks; plus, in between trips, we have had doctor/physical therapy appointments for my son (19 months) to determine why he was not yet walking.
