Mini Baking Day

Thanks to an inspiration by Money Saving Mom, I decided to have a mini baking/prepping day today. Baking days really help to have foods prepared and ready to use when you need them (whether you are freezing the items or using them for that week’s meals/snacks). Having foods pre-made and pre-prepped really helps me out during the week when I have limited time for preparing meals (which is often!). Also, if you have pre-made items ready to eat, it will decrease the amount of prepackaged foods that you and your family eat, which is not only healthier but cheaper as well!

Here is what I made/prepped today:

The first thing that I made was Homemade Wheat Bread. This bread is so good and so easy (especially with my Breadman bread machine to do the kneading for me!)! Everyone in our family loves it (and it makes the house smell so good)!

The next item that I prepped might seem a little odd…I made 10 cups of coffee to refrigerate. I love iced coffee from Starbuck’s, but buying coffee from Starbuck’s several times a week can really add up. So, I like to make my own iced coffee at home. It is just as good and much cheaper!

Iced Coffee
ice
chilled coffee
sugar or sweetener to taste
milk or liquid creamer to taste

Pour chilled coffee over ice. Add sugar and milk to taste. Enjoy!

Next, I made Cranberry Oatmeal Muffins. This was the first time that I have made these muffins. My husband and I both agreed that the cake-like part of the muffin was really good; however, the cranberries were a bit too tart and needed to be sweetened further. I think that next time I will try this recipe with blueberries, blackberries, or strawberries, and they should be just right!

By the way, here is a little tip for evenly portioning muffins or cupcakes. Use an ice cream scoop! The muffins or cupcakes will be perfectly even every time!

The last item that I prepped was 10 lbs of onions. This was by far the least pleasant task, but it will be so helpful in the future! I diced some of the onions and cut the others into strips and sorted them accordingly.

I purchased this bag of onions for $4.99 at Costco. This sets the price per pound at $0.50…that’s a great bargain! It took a little extra effort to pre-prep, but it was worth it for the savings and convenience!

    I love using my ice cream scoop for making muffins! It’s so easy, less messy, and makes the perfect amount per muffin cup. I’ve been doing that for while so it made me smile to see that tip! 🙂

    I did some baking this week too! I made 3 loaves of sour dough bread and peanut butter banana muffins.

    Prepping onions is an unpleasent task…agreed, but prepping a whole lot for a whole week at one time is a great idea! Saves you a lot of trouble every day!
