Groceries Galore – Publix Purchase May 29

I haven’t been feeling well the past couple of days, so I didn’t really feel like shopping today, but several of my coupons expired today (including the Health and Beauty Advantage Buy coupons), so I felt compelled to get my list together and go out. I think that the results were well worth the effort as I was able to get MANY items for free as well as getting a good amount of overage to cover the cost of some of the other items! Getting “Krafty” Recipe #3 – Barbecue Chicken Tacos

The third recipe in my Getting “Krafty” recipe series is Barbecue Chicken Tacos. I love just about anything with a Mexican twist, so this recipe looked especially delicious to me! This will make for a quick, healthy dinner! This recipe features Kraft Barbecue sauce…so pull out all that free barbecue sauce (well, no need to pull it all out…one will do!)!

Barbecue Chicken Tacos

2 cups shredded skinless rotisserie chicken meat (or any cooked, shredded chicken)
1/3 cup barbecue sauce
1 1/2 cups fresh corn kernels (1/2 cup per ear)
2 plum tomatoes, chopped
1 tablespoon fresh lime juice
8 (6-inch) flour tortillas
3 cups thinly sliced lettuce
1/2 cup reduced-fat sour cream

In large bowl, stir together chicken, barbecue sauce, corn, tomatoes, and lime juice. Just before serving tacos, place stack of tortillas between paper towels on microwave-safe plate; heat in microwave on High 10 to 15 seconds to warm. To serve, divide lettuce and chicken mixture among tortillas; fold over to eat out of hand. Serve each with a dollop of sour cream.

Ham and Green Onion Cream Cheese Spread

This recipe has nothing to do with my Getting “Krafty” recipe series, but I thought that I would share it, because it is easy, inexpensive, and, most importantly, so yummy! It makes a great appetizer or snack and is perfect to take to gatherings!

Ham and Green Onion Cream Cheese Spread

8 oz block cream cheese, softened (I use 1/3 less fat)
Green onions to taste (2-3 Tbsp is about what I use)
2 oz of thinly sliced sandwich ham (I use Buddig ham in the individual packages)

Mix together all ingredients. Serve with crackers (I like this best with Triscuits!).

Getting “Krafty” Recipe #2 – Easy Ranch Dressing Chicken

Here is another idea for using up all of that stockpiled Kraft dressing! This recipe features Kraft Ranch dressing.


Easy Ranch Dressing Chicken

8 boneless, skinless chicken breasts
2/3 box crushed Ritz crackers
1 (18 oz.) bottle Ranch dressing

Soak chicken breasts in dressing overnight. Cover cookie sheet in foil wrap. Dip chicken in crushed Ritz cracker crumbs and place on cookie sheet.

Cover with foil wrap. Bake 1 hour covered and 10 minutes uncovered to make crisp at 350 degrees.

I haven’t tried this one yet, but it sounds really good and really easy! I think I will add it to next week’s menu – especially since I was able to get Ritz crackers for really cheap a couple of weeks ago!

Getting “Krafty” Recipe #1 – Cranberry Chicken

I don’t know about you, but after using many of the Kraft coupons, I have a large stockpile of Kraft dressings, Kraft barbecue sauce, and A-1 steak sauce! If you have been as diligent in using these coupons and getting items for free or close to free as I have, you are in desperate need of some recipes that use these products. I mean what is the purpose of getting all of these items for free if you let them go bad? So, for the next few weeks, I am going to share the recipes that I have or that I find that have one of these Kraft products as an ingredient. The first recipe that I’m going to share is Cranberry Chicken. A friend gave me this recipe several years ago. It may sound weird, but it is delicious! This recipe features Kraft Catalina dressing.

Cranberry Chicken

1 to 1.5 lbs boneless skinless chicken breasts
16 oz. bottle Kraft Catalina dressing
1 can whole berry cranberry sauce
1 packet onion soup mix

Spread a thin layer of dressing on the bottom of a 9 x 13 casserole. Place chicken breasts in casserole. Spread cranberry sauce over chicken. Sprinkle onion soup mix over all. Pour remainder of dressing over all.

Cover with foil. Bake at 350 degrees for about an hour. Serve over rice.

This recipe is great and nice enough for company! Hope you enjoy!
